The discharge of the grapes is done on the "hopper", a kind of inverted pyramid as a funnel, and grapes will depositor on a "without end " that will lead directly to the crusher, after analysis of the fruit to determine their health status and its content in sugars and acids. The grain crusher push just enough to keep seeds and stalks (the cluster structural support) to break and contaminate the wine. The resulting paste is transferred by means of "pressure pump of pasta" to the press, without contact with air to stop the beginning of fermentation. If this is a red wine, before proceeding to press the pasta must be stemmed. From here, the process will take different paths whether they are red, white or rosé.
