The grinding consists of grinding the fruit (without prior boning) to form a paste which is subjected to shake. PROTECTED DESIGNATION OF ORIGIN (DOP)
Another type of extra virgin oil produced and bottled the Almazara San José is made from olives from the geographical area of Campos de Hellin. Our oil is subject to certain controls and DOP is officially recognized.
